Hey guess what? I just deleted my documents foloder. How do I get it back?????

Did you also empty the Trash?
If it is still in the Trash, just drag it back to your home folder.

And are you concerned with getting back the files that were in that folder - or just the folder itself?
I guess that the folder itself might get recreated when you log out and in again. But not the files. If you are concerned about the files (I'm assuming you have emptied the Trash so they really are gone) then you are in a data recovery situation. There is a (small) chance that you can recover some of the files by using a 3rd-party utility like "Data Rescue" or "FileSalvage" or "Virtual Lab" (google to find them).

Just make sure not to use your computer, or as little as possible in the mean while as simply turning it on will write to the hard drive and may overwrite those deleted files and make them much harder to recuperate...

And a note, don't try the Symantec restore app... Stick with the ones Hayne proposed. The Symantec one has a bad reputation on Mac as almost all Symantec products... last user I saw use it got continuous kernel panics after using it, that is until I wiped the hd completely and formatted.
