Uninstall OS X

My Hard Drive is divided into 3 partitions, and until recently I had OS 9.2.2 on Part.1 and OS X.1.2 on Part.2 with Part.3 being unused.
Mac OS X developed a problem which I was unable to fix - it stalled during startup (echoes of previous extensions conflicts!!)
I undertook a new installation of OS 10.1.2 onto Part.3 and this has fixed my problem and also it appears to run faster now as well.

My question is - how do I uninstall the old unused OS X from Part. 2.?
I have been able to get rid of most of it but there are numerous invisible items which resist all attempts to trash them (yes I've tried BatChmod).
Second question - can I use the Erase section of Disk Utility as it doesn't appear to have a HFS+ formay option?

1. Just erase the second partition (see below).

2. Yes--the erase function in Disk Utility can erase the partition, and it does have the HFS+ option.

If you *really* want to get rid of everything on partition 2 for some reason or other, then use the Wipe Disk feature of Norton Utilities or some similar utility to zero out the partition.
