finder command-drag ~/Documents to /Volumes/Data -- this will 'move' the dir, i.e., copy-to-target/delete-source
create an alias to /Volumes/Data/Documents in ~/

I've read that it's a good idea to create a symlink to the new drive instead of an alias. You can do that via the command line or with a utility called Cocktail.
You might want to do this with your entire home directory, not just the documents directory. Or go for broke and symlink the Users directory.

I've moved my entire Home dir except the desktop and Library folders.
I took a look at it (Cocktail) on VersionTracker. I'm kind of a Neophyte here, what's the difference pro and con? Aliases seem to work fine so far.

keep your eye on it and keep the fact that you've aliased these dirs to elsewhere in the fore of your mind.
the fact is that finder aliases and UNIX symbolic links are different animals and some apps don't honor one or the other completely, too very well. and the UNIX shell/BSD-tools no habla finder aliases at all.

Thanks for the heads up, although I really just intend to use these dirs for storage (doubt if I'll turn on anything that uses the Public or Sites folders) and with iLife.
