The process by which each school goes about verifying the information you have provided them does vary. However, many schools will contact the registrar from your undergraduate (and graduate) institution to verify your GPA and academic standing, and nearly all schools will check your GMAT results with ETS/GMAC.
In addition, many schools will call your recommenders to make sure that they actually participated in the process (i.e. you didn’t send in a letter in their name without their knowledge). Some schools will call the extracurricular organizations you have mentioned in your application to verify that you have been involved with them.
Finally, more and more school are hiring external background checking services to check your work dates, salary, and criminal record.
I would strongly recommend that you steer away from stretching the truth in your applications ?being caught doing so would be detrimental to your candidacy.
